Job Description
As Assistant Chief Steward, I will assume full responsibility for the efficient operation of the Stewarding Department to provide exceptional product and service within brand operating standards. Manage the stewarding function in all kitchen areas to promote overall cleanliness, sanitation and compliance with state and local health regulations.
Responsibilities
- Manage the stewarding function in all kitchen areas
- Determine and control par stocks of materials and equipment
- Liaise with Purchasing Department regarding needs
- Supervise cleanliness and storage of dishes
- Control storeroom orders for china, silver, and glass
- Supervise day-to-day operations and assignments of stewarding staff
- Enforce policies and procedures
- Control and analyze cost and breakage
Qualifications
- High school diploma or equivalent
- Two years’ experience in stewarding, kitchen maintenance, or kitchen operations
- At least one year in a supervisory capacity
